Absolutely Official Weigh-In Results for the 15th

Okay Losers,

here it is,
Chris------scant 1%

but our grand total of weight loss is 48.1 pounds for the group. That is just fantastic.

we are certainly on our weigh out.

Here's my version of Egg McMolina, and its so much healthier for you.

You will need a small maybe 6 inch skillet.

Ingredients:
Turkey Ham- 1 slice
Egg ( please note: 1 egg will make two sandwiches.)
Light -Whole Wheat English Muffins
Any light cheese
Light marjarine

In small skillet, lightly brown a slice of turkey ham, set aside
Slice English muffin and toast
Lightly beat egg in small bowl with fork, and fry in the small skillet. Turn over once when bottom side is done and cut in half.

Spread a tiny amount of light margarine on toasted muffin, then layer slice of turkey ham, the egg, and a slice of light cheese. Top with remaining side of english muffin, and voila:

our much lighter version of Egg McMolina. Its very good and a great way to start the day. You can mix and match your likes and dislikes with this any way you want. Enjoy and good luck everyone.

  2. A few posts ago, I mentioned I was fixing salmon for supper. It was disgusting. I am NOT a picky eater at all, however, I forced myself to eat it so the kids would eat part of their salmon. Collin summed it up...."oooh, this is yucky, blah!" Normally I would not allow this kind of mouthiness at the table, but being since I agreed with him, I let it slide. I did buy some ingredient's for Lori's turkey roll-ups she has on her blog. I bet that will go over much better. :)

  4. Here's my latest low-fat, low carb recipe:

    Pork ribs.

    I had pork ribs for dinner on Thursday, Friday, and Saturday nights. I may have a few tonight also

    Here's what ya do:

    chop up the ribs and place them in a large pot of boiling water. Add pepper, a chopped onion, and garlic salt. Boil untill ribs are done. Throw the ribs on the grill and add BBQ sauce with a BBQ brush.

    Here's what you don't do:
    Don't buy 3-rack pack of ribs when you're home alone just because you think $1.29/lb is a fantastic deal.

  5. Hey, Kristy, you will love this one. When we lived in Calif., I got on a healthy cooking kick and spent one Saturday afternoon cooking up some tuna dish. The first boy took a bite and burst into tears. The second boy didn't learn from the first, took a bite and burst into tears. I'm telling them that they're going to eat their flippin' dinner, as I went to a lot of time and effort to fix it. I took a bite, the room is silent and both boys are looking at me with something like fear....I said "We're ordering Chinese". Both boys yelled "Yay!!". End of story. Ask Chris and Chad about the black bean soup.

  6. Kristy, I about split a gut reading about the salmon. I had lots and lots of goofs in my cooking history. Don't give up on salmon. It's so good and good for you!
    One of my first disasters was when the lid came off the pepper shaker as I was adding pepper to potato soup. We had pepper soup and it wasn't very tasty.
    I've also thrown out my share of bread dough that turned out like concrete.

  7. To this day I do understand why my mother insisted on serving liver. I was fine with a can of Ravioli. Come to think of it Ravioli was kind of a hidden treasure. I knew mom and dad were going out and a baby sitter was coming when the Ravioli was brought out. I love Ravioli!

  9. Well let me tell you about a lovely bean episode I had. Had a real nice dutch oven pan full of wonderful baked beans, went to get them out of the oven, and I tipped the beans over, all over the oven. Here I am in the middle of a cook- out at our house, trying to clean up hot beans, from a hot oven. Needless to say, I was pretty hot under the collar that day. What a lovely mess that was. My guest saw and heard the real me.

  10. We just had a lovely experience with some home-made "lowfat" mac and cheese. The recipe looked delish, however the final product was definitely not. Jason who always eats what I make was not able to eat this :( Gross. (The turkey burgers were not much better, either). Sorry, I didn't take pictures of any of it!

    I think we all have had our share of culinary flops (and tears). You just have to say this is gross, who wants ravioli or Chinese, and move on.

  11. Todd, I served liver because my mom served it. I don't serve it now, though, because of all the bad things I've been told about eating liver.
